En el siglo XV se produjo la conquista europea de las islas Canarias y su integración en el incipiente circuito comercial entre Europa, América y África. La introducción de la caña azucarera representó el primer cultivo de exportación de la economía insular, a través de su principal producto: el azúcar. Desde principios del presente siglo se ha llevado a cabo un progreso paulatino en la investigación arqueológica y en el estudio de las huellas materiales que la actividad azucarera dejó en las islas, coincidiendo con una mayor valoración de la información que la arqueología moderna o histórica puede aportar al conocimien- to histórico. En el presente artículo se pretende ofrecer una visión integral de los trabajos desarrollados hasta el momento, así como la recepción por parte de la sociedad canaria del patrimonio histórico rela- cionado con el azúcar.
